As I was busy in the kitchen cleaning up after serving this plate full of yummies to my family, all I heard was mmmmm, mmmm, mmmm these are good.  So yes, tried and true is this recipe.  If you want to hear happy sounds from your family, try out this simple recipe!

Date Nut Logs

 

1 cup pitted dates, soaked in water up to 30 minutes

1/2 cup dates, dried apricots or figs, soaked in water up to 30 minutes (I used figs)

1 cup pecans, walnuts or almonds, ground (I used pecans)

1 cup unsweetened dried coconut

1 tsp. cinnamon or pumpkin pie spice (I used cinnamon)

 

Grind nuts in a food processor, or buy your nuts ground.  Add coconut first, then cinnamon.  Finally, add dates and other dried fruit a few pieces at a time.  Shape batter into small logs 1/2-3/4 inch and roll in dried shredded coconut, or ground nuts.  Chill until stiff!  You might want to think about doubling the batch to keep extras in the freezer for a quick and yummy snack!

The kids really enjoyed helping to shape the logs and roll them in coconut!
