Super Simple Egg Drop Soup

 

In a rush to whip up a dish for lunch or dinner???  Whip up a few eggs!  This is a super simple and quick recipe to keep in mind. 

 

Super Simple Egg Drop Soup

 

1 32 oz. carton of organic free range chicken or vegetable broth (or prepared veggie or chicken broth)

4-6 Cups water (more or less depending on how rich you desire the soup)

1/2 teaspoons grated ginger (optional)

4 eggs whisked (or more if desired)

2 Tablespoon namu shoyu or soy sauce (more or less to taste)

Salt and pepper to taste

Garnish with chives or green onions

 

Bring broth, water and ginger if using to a boil.  Reduce heat and slowly pour eggs in pot while slowly stirring in one direction.  Add namu shoyu or soy sauce and salt and pepper to taste.  Garnish with chives or green onions. 

 

Use what you have!  I grow chives out my front door, so of course I used chives to garnish.  As you can see, this recipe can be altered to taste as most recipes can.  It's all about flexibility here folks!
