This is by far my favorite salad, EVER! You'll have a crowd surprised their eating kale!
Anybody Can Eat Kale Salad
1 bunch of organic kale (stems removed, sliced in 1/2 inch strips)
4 Tablespoons flaxseed oil
3 carrot sticks (diced or julienned)
1 red pepper (diced or julienned)
1 zucchini (diced or julienned)
4 Tablespoons minced parsley
1 bunch green onions (sliced)
2 cloves garlic minced
3 Tablespoons nama shoyu (raw soy sauce) or soy sauce
2 Tablespoons nutritional yeast
1 lime (juice from)
Place sliced kale in large bowl with flax seed oil. Mix and rub oil into kale with your hands. Add the remaining ingredients and stir well. Serve immediately or chill. I enjoy the flavor and texture when served immediately, its also yummy when the kale has an opportunity to soften by marinating for a few hours or overnight.
Raw Gomasio (recipe below), or toasted sesame seeds
1 cup hulled or unhulled sesame seeds
2 teaspoons nama shoyu
1 teaspoon flax seed oil
Place all ingredients in a bowl and stir until well incorporated. If desired, spread seeds in thin layer on teflex sheet. Dehydrate at 105 degrees for 2 hours.
