Raw Dark Chocolate Fudge

 

This recipe is so healthy and simple!  My family absolutely loves these little gourmet fudge squares!

 

Raw Dark Chocolate Fudge Squares

 

2 1/2 cups raw walnuts

18 pitted dates

2/3 cup raisins

2/3 cup unsweetened cocoa or carob powder (carob version is really good too!!)

1 tsp. vanilla

 

Place the walnuts in food processor fitted with the S blade and process until finely ground.  Add dates and raisins and process until the mixture sticks together.  Add cocoa powder and vanilla and process until evenly distributed.

 

Firmly press mixture in smaller 5 x 7 pan, pie plate (cut in wedges) or cake pan.  If doubling the recipe use a 9 x 13 pan.   Refrigerate for 30 min. to an hour.  Cut in 1 inch squares and serve.  You may want to double this recipe if you want leftovers.  These squares are gone in one evening in my household!  Will keep for up to one week in the refigerator and up to one month in the freezer.
