Last week I got a little creative with my usual tuna salad recipe, and wow am I so glad I did! I love this stuff. There are so many different ways to serve this salad: on top of greens, in peppers, spooned into the crevise of a large piece of celery, spooned onto cucumber discs, on ezekial bread, straight out of the mixing bowl, on top of deydrated disks of egg plant, the list goes on and on...seriously.
Curried Up Tuna Salad Stuffed Peppers
1 can of tuna
About 6 radishes, diced
1 celery stalk, diced
1 small apple, diced
1/3 cup mayo, more if creamier texture desired, real mayo Trader Joe brand if possible
1 tablespoon curry, organic if possible
1 tsp spicy brown mustard, Trader Joe brand if possible
Salt and Pepper to taste
2 bell peppers any color for stuffing
Remove tuna from can and fork it out in a medium sized bowl. Add radishes, celery, apple and mix well. In a seperate small bowl mix together mayo, curry, spicy brown mustard, pinch of salt and pepper and mix well. Add sauce to tuna mixture and combine thoroughly. Taste and add salt and pepper as needed.
I tripple this recipe when making it for my family of five, we aren't small eaters. Although, we did have leftovers, which I certainly did not complain about! I also enjoy eating this recipe on large stalks of celery and in romaine lettuce boats.
